White Chocolate Pumpkin Spice Cookies

If you are a basic white girl, like me, and want pumpkin spice EVERYTHING this time of year, then these cookies will not disappoint. And, even if you’re not a basic white girl, I’m fairly confident you will still enjoy these cookies. Because honestly, my husband requested that I make these cookies last week, and he is definitely not into pumpkin spice things. Or a basic white girl.

Anyway, I’ve been making these cookies for years. And fall is just not complete without them.

Here is the recipe:
  • 2 1/4 c flour
  • 1 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1 c butter
  • 1 1/2 c brown sugar
  • 1 c pumpkin puree
  • 2 eggs
  • 1 tbsp (I usually use a little less than that) vanilla
  • 2 c white chocolate chips (I just used one 12 oz package)
  • 1 c pecans (optional)

Preheat oven to 300 degrees Fahrenheit. In a mixer cream butter and brown sugar. Add pumpkin puree, eggs, and vanilla. Beat in flour, baking soda, and pumpkin pie spice. Stir in white chocolate chips and pecans.

Use a tablespoon to drop dough onto an ungreased cookie sheet. Bake for 20 minutes.
