Almost all of the meals we make at home also include salad. If you want to have salad as well, don’t forget to include lettuce, carrots, broccoli, etc. on your list.
Monday: 1 lb Italian pork sausage, 2 tbsp olive oil, 1 onion, 1 green pepper, 3 cloves of garlic, 32 oz chicken broth, 15 oz tomato sauce, 14 oz petite diced tomatoes (sometimes I use stewed tomatoes if that’s all I have), 1/2 tsp salt, 1/4 tsp crushed red pepper, lasagna noodles, 1/2 c fresh basil, 3 tbsp grated Parmesan cheese, 1/2 mozzarella cheese + a little extra for topping
Tuesday: 1 lb salmon, salt, pepper, olive oil, 2 tbsp butter, 3 tbsp honey, 3 tbsp soy sauce, 2 limes, 1 bunch cilantro, cooked rice (for serving)
Wednesday: 1 package of Costco’s Kirkland Signature Smoked Pulled Pork (we use half at a time and that is plenty to serve 2)
Pizza Dough: 1 tsp active dry yeast, 2 c flour, 3 tbsp olive oil, 3/4 c warm water, 3/4 tsp salt
Pizza: 1 clove of garlic, 1 tbsp minced fresh ginger, 1/8 c soy sauce, 1.5 tsp sesame oil, 1/4 tsp fish sauce, 3/4 c smooth peanut butter, 1/4 c warm water, 2 tbsp Thai chili paste, 1 chicken breast, salt, pepper, 4 tbsp Thai sweet chili sauce, 12 oz fresh mozzarella cheese, 1 c alfalfa or bean sprouts, 1 c shredded carrots, 1-2 c cilantro leaves, 1/2 chopped peanuts
Friday: Eat Out
Saturday: Eat Out
Sunday: Happy Easter
Heat olive oil in a large pan over medium heat. Add sausage, minced garlic, chopped onion, chopped pepper, salt, pepper, and crushed red pepper. Once meat it thoroughly cooked, remove it from the pan and place it in a slow cooker. Add chicken broth, tomato sauce, petite diced tomatoes, basil, grated cheese, and mozzarella cheese. Cook on low for 6-8 hours or on high for 5-6 hours. Add noodles 30-45 minutes before serving.
If you buy the Kirkland Smoked Pulled Pork it comes fully cooked. All you have to do it heat it up. Place it in an oven safe dish, break it apart as best you can, add whatever BBQ sauce you like, and let it heat up at 350 degrees Fahrenheit until warm. Serve alone, or in a bun as a sandwich.

Thai Chicken Pizza:
This is also a Pioneer Woman recipe that is only found in her cookbook Food From My Frontier.
Make the pizza dough according to the recipe (above). Preheat oven to 500 degrees Fahrenheit. In a food processor or blender, combine garlic, ginger, soy sauce, sesame oil, fish sauce, peanut butter, warm water, and Thai chili paste. You may have to add more water for consistency. Cook chicken thoroughly (I usually put mine on the barbecue seasoned with salt and pepper). To assemble the pizza, spread pizza dough on a pizza stone and spread Thai sweet chili sauce on the dough. Lay on the sliced mozzarella cheese, then the cooked chicken slices. Bake the pizza for 12-15 minutes or until golden brown and bubbly. Take the pizza out of the oven and add the sprouts, shredded carrots, and cilantro. Drizzle the peanut sauce over the pizza and top with chopped peanuts.
